Young Wax Gourd

Young wax gourd (Benincasa hispida) is harvested before full maturity. It has tender pale flesh, thin green skin, and a mild refreshing flavor. Compared with mature wax gourd, it cooks more quickly and is commonly used in stir-fries, soups, and curries.
