Artichoke

Artichoke (Cynara cardunculus var. scolymus), also called globe artichoke, is a green flower bud vegetable. It has a mildly nutty, slightly sweet taste. Thick overlapping bracts surround a tender heart. Rich in fiber and antioxidants, it is commonly steamed, grilled, or added to Mediterranean dishes.
